The Bitter Bartender” – Devraj Sanyal and Romil Ratra take over the Bar at Yauatcha, BKC for a cause

This Thursday head to Yauatcha BKC, as music honcho Devraj Sanyal, MD & CEO of Universal Music Group along with seasoned hospitality expert Romil Ratra, CEO of The A Club take-over the 28ft long Yauatcha Bar and fight for the position of “The Bitter Bartender”. Guests and friends will select either of their cocktails that are made with over 30 home-made infusions and bitters and cheer to their favourite bartender to win this title. 20% of those cocktail sales will then be proceeded to “Dharavi Dream Project” that supports the young under-resourced talent of Dharavi in Mumbai.

The philosophy of the Yauatcha mixology program is ‘fresh and eclectic’. They offer a wide selection of cocktails using fresh ingredients, homemade purees, fruits, herbs and spices that pay a modern homage to Asian flavours. Keeping true to this ethos, the bar team has created over 30 home-made bitters and liquors that are showcased in the newest cocktail menu; “The Infusion List”. Romil and Devraj have selected their favourite 3 cocktails from this and will be re-creating them during the fun evening. While Romil’s drinks include the Lavender Aviationi made with homemade lavender liqueur, lemon and gin, the well-balanced Aquavit Mule that embraces homemade aquavit bleneded along with vodka, lychee, lime and ginger ale and Romil’s absolute favourite pick the Dark Negroni with homemade dark crème de cacao, gin, Campari and homemade chocolate bitters; Devraj’s drinks are a lot lighter and easy. He highly recommends the shaken and double strained Asian Highball made with homemade kaffir lime liqueur, peach puree and syrup with a dash of Ballantines finest whiskey or the Platinum Negroni comes with homemade earl grey infused vodka, sweet vermouth, Sambuca finished with dehydrated grapefruit.

The idea of creating “The Infusion List” – a collection of cocktails made using over 30 home-made liquors and bitters was born from a desire to elevate the dining experience for people who love the complexity of cocktails. This list will be launched at this fun evening dedicated to a cause initiated by Devraj Sanyal. So do drop by and drink and help support the “Dharavi Dream Project”.

Devraj Sanyal is the MD & CEO of Universal Music Group and has been running the businesses for it in South Asia & India since the past 6 years. Sanyal also runs the publishing business for the region and is regarded as the top A&R man, now compounded by his role as a judge on network TV’s largest all English reality show called “The Stage” for the third season this year. He is also a founding member of Brahma, India’s premier metal band.

A well-travelled and a self-motivated hospitality professional with over 24 years of work experience in the hospitality industry, Romil Ratra has worked with The TAJ Group, The InterContinental Hotel, Graviss Hospitality, The Phoenix Group and been the Co-Founder at Bellona Hospitality. His latest venture is The A Club, a new age Private Members work collective.

The cocktail menu at Yauatcha is meticulously divided into sections of Citrus and aperitif, Fruity and fresh and Aged and experimental. Both Devraj Sanyal and Romil Ratra will mix one cocktail from each category and compete against each other. Devraj’s cocktail list includes East West Martini with home-made kaffir lime liqueur, gin, lime, cranberry; Asian Highball with homemade kaffir lime liqueur, peach puree and syrup with a dash of Ballantine’s finest whiskey and the Platinum Negroni with homemade earl grey infused vodka, sweet vermouth and Sambuca. Romil’s cocktail list features Lavender Aviation with home-made floral tea liqueur, Beefeater gin, sake; Aquavit Mule with home-made aquavit, Absolut vodka, lychee, lime, ginger ale and Dark Negroni with homemade dark crème de cacao, gin, Campari and homemade chocolate bitters.
